Olam Cocoa took the opportunity presented by Fi Europe to showcase its premium cocoa powder deZaan D11BK, the new deZaan Flavour Friends pairing tool, and the latest iteration of the deZaan Cocoa Manual.

According to Olam, deZaan D11BK cocoa powder is the first ever nib alkalised, black cocoa powder that provides both intense cocoa flavour and very dark colour, without added sodium. Excessive salt intake remains a serious health concern globally,the company notes, with the majority of it consumed unknowingly in processed foods. Unlike other dark cocoa powders, which are typically processed using sodium alkalising agents, Olam says that D11BK uses potassium instead, reducing the sodium in the formulation while maintaining the flavour and colour impact benefits of a typical dark cocoa powder.

“We are committed to helping our customers find ideal ingredient combinations that deliver rich flavour and colour impact but that also meet growing consumer demand for healthier products which offer ‘permissible indulgence’ experiences,” said Rinus Heemskerk, Global Head of Product Development & Innovation for Olam Cocoa. “deZaan D11BK is well suited to deliver against this, while our new Flavour Friends tool will support our customers as they explore new flavour combinations in applications, ensuring that they don’t need to compromise on the sensory experiences that their products provide.”

Working alongside Dutch master Chef Angelique Schmeinck, Olam Cocoa has created Flavour Friends, a tool designed to enable the discovery of new or unexpected flavour and ingredient relationships. It is said to provide interesting options for the combination of deZaan cocoa powders with various fruits, beverages, herbs, spices, nuts, seeds, teas and vegetables.

At FIE, Olam Cocoa also unveiled the latest edition of the deZaan Cocoa Manual, which the company says is one of the most respected and coveted cocoa reference resources in the industry. Starting from the first manual edition published in 1969, Olam says the manual’s content has been unmatched in depth and scope of information. To help customers keep abreast of global trends, the new 2017 version includes a chapter dedicated to the health aspects of cocoa. Alongside the launch of D11BK and Flavour Friends, Olam says the manual exemplifies ots ability to provide expertise, value-added benefits and unique opportunities to its customers.
